  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • ½ cup mayonnaise
  • 12 tablespoons sriracha (adjust to taste)
  • 1 teaspoon lime juice
  • 2 cups cooked jasmine or brown rice
  • 1 tablespoon rice vinegar (optional)
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 1 cup cucumber slices
  • 2 green onions, chopped
  • 2 tablespoons sesame seeds (optional)
  • Soy sauce or tamari for drizzling (optional)

Instructions

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Combine the smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne in a mixing bowl.
  3. Toss the shrimp in the spice mixture until they are evenly coated.
  4. Cook the shrimp in the skillet for about 2-3 minutes on each side until they are pink and opaque.
  5. Mix the mayonnaise, sriracha, and lime juice in a clean bowl until smooth.
  6. Assemble the bowls with layers of shrimp, rice, and fresh vegetables.
  7. Garnish and drizzle with additional sauces if desired.

Notes

Be sure not to overcook the shrimp to avoid rubbery texture. Adjust the level of sriracha according to your heat tolerance.
