A flavorful and easy-to-make spicy salmon sushi bake that combines seasoned sushi rice and a creamy salmon topping, baked to perfection.

Ingredients

  • 2 cups sushi rice (uncooked)
  • 2.5 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 lb fresh salmon fillet, skinless and diced
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce, or to taste
  • 1 teaspoon sesame oil
  • 1/2 cup green onions, chopped, plus extra for garnish
  • 1 sheet nori, cut into small strips
  • Tobiko to taste, optional for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the sushi rice in cold water until the water runs clear. Drain.
  3. Combine the rinsed rice and 2.5 cups water in a rice cooker or a heavy pot. Cook according to your device instructions until the rice is tender.
  4. In a small bowl, stir together the rice vinegar, sugar, and salt until dissolved.
  5. Transfer the hot rice to a wide bowl. Fluff with a fork and gently fold in the vinegar mixture. Spread the seasoned rice evenly in a greased baking dish and let it cool for 5 minutes.
  6. In a separate bowl, combine the diced salmon, mayonnaise, Sriracha, sesame oil, and chopped green onions. Taste and adjust the Sriracha for desired heat.
  7. Spread the salmon mixture in an even layer over the rice.
  8. Bake for 25 to 30 minutes, until the salmon is cooked and the top is lightly golden.
  9. Remove from the oven and let rest for 5 minutes. Garnish with green onions, nori strips, and tobiko if using. Serve warm.

Notes

Consider switching Sriracha for another chili paste to adjust the heat. Use short-grain sushi rice for the best texture.
