A refreshing no-bake strawberry pie featuring fresh strawberries coated in a thick gelatin sauce and set in a crumbly graham cracker crust. Perfect for summer gatherings and easy to prepare.

  • 1 pint fresh strawberries, washed and hulled
  • 1 cup granulated sugar
  • 1 cup water
  • 1 small box flavored gelatin powder (strawberry or clear)
  • 3 tablespoons cornstarch
  • 1 graham cracker pie crust
  • Cool Whip or whipped topping to serve

Instructions

  1. In a small bowl, whisk the cornstarch into the cup of water until fully dissolved and smooth.
  2. Pour the cornstarch mixture into a medium saucepan. Add the sugar and gelatin powder, stirring to combine.
  3. Heat the saucepan over medium heat, stirring constantly. When the mixture reaches a boil, keep it boiling for one minute while continuing to stir to activate the cornstarch.
  4. Remove the pan from heat and let the mixture cool for about 10 minutes.
  5. Meanwhile, cut the strawberries in half or quarters and place them in a large mixing bowl.
  6. Pour the cooled gelatin sauce over the strawberries and gently stir until each berry is coated.
  7. Spoon the coated strawberries into the prepared graham cracker crust and smooth the top.
  8. Refrigerate the pie for about 2 hours or until the gelatin is fully set.
  9. Serve chilled with a generous dollop of Cool Whip.

Notes

For best flavor, use ripe strawberries. If strawberries are out of season, thawed frozen berries can work but expect extra juice. A clear gelatin keeps the berries’ color true; strawberry-flavored gelatin amps flavor and sweetness.
