Strawberry Rhubarb Jam

A bright, tangy jam that balances sweet strawberries with tart rhubarb, perfect for spreading on toast or using in desserts.

Ingredients

  • 2 cups rhubarb, chopped
  • 2 cups strawberries, hulled and chopped
  • 2 cups sugar
  • 1/4 cup lemon juice
  • 1 package fruit pectin (about 1.75 ounces)

Instructions

  1. Place the chopped rhubarb and strawberries into a large, heavy-bottomed pot.
  2. Add the sugar and lemon juice. Stir together and let rest for about 30 minutes.
  3. Sprinkle in the fruit pectin and stir thoroughly.
  4. Set the pot over medium heat and bring to a full, rolling boil while stirring constantly.
  5. Once boiling, reduce heat slightly and cook for about 10 minutes.
  6. Remove from heat and ladle the hot jam into sterilized jars, leaving about 1/4 inch headspace.
  7. Let jars cool completely on a rack or process in a boiling water bath for long-term storage.

Notes

If your rhubarb is very tart, add up to 1 tablespoon more lemon juice. For less sugar, use low sugar pectin.
