  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup strawberry emulsion
  • 1 cup freeze dried strawberries, crushed
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt until evenly distributed.
  3. Beat the softened butter, granulated sugar, and brown sugar until creamy. Add the eggs one at a time, then stir in the vanilla extract and strawberry emulsion.
  4. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Fold in the crushed freeze dried strawberries and white chocolate chips, if using.
  5. Drop large spoonfuls of dough onto the prepared baking sheet, spacing them well apart.
  6. Bake for 12 to 15 minutes, or until the edges are lightly golden and the centers appear set.

Notes

Store cooled cookies in an airtight container for up to 2 days or freeze for up to 3 months. Reheat from frozen in a 300°F oven for 6 to 8 minutes.
