A silky, tangy cheesecake with bright strawberry ribbons, perfect for celebrations and gatherings.

Ingredients

  • 1 1/2 cups fresh or frozen strawberries, hulled
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (slurry)
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 ounces (3 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/4 cup heavy cream

Instructions

  1. Combine strawberries, sugar, and lemon juice in a small saucepan over medium heat.
  2. Cook until strawberries soften, about 5 to 7 minutes.
  3. Use a potato masher to break the strawberries into a coarse puree.
  4. Stir in cornstarch slurry and cook for 1 to 2 minutes until thickened.
  5. Remove from heat and let cool completely.
  6. Preheat the oven to 325°F (160°C).
  7. Mix graham cracker crumbs, sugar, and melted butter in a medium bowl.
  8. Press mixture into the bottom of a 9-inch springform pan.
  9. Bake for 8 to 10 minutes and let cool.
  10. Beat cream cheese and sugar in a large bowl until smooth and fluffy, about 2 to 3 minutes.
  11. Add eggs one at a time, mixing briefly.
  12. Mix in vanilla extract, sour cream, and heavy cream until just combined.
  13. Pour filling onto cooled crust and smooth the top.
  14. Drop spoonfuls of cooled strawberry sauce onto filling and swirl with a knife.
  15. Place the springform pan inside a larger baking dish with hot water.
  16. Bake for 55 to 65 minutes, until edges are set.
  17. Cool in the oven for 1 hour, then refrigerate for at least 6 hours.
  18. Slice and serve with extra strawberry sauce.

Notes

Use frozen strawberries if fresh are not available. For a gluten-free crust, substitute with gluten-free graham crumbs.
