Spinach and Cheese Stuffed Chicken

A creamy spinach and cheese filling stuffed inside seared chicken breasts, then baked for a juicy and flavorful main dish.

  • 4 chicken breasts
  • 1 cup fresh spinach, chopped (packed)
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, stir together the softened cream cheese, shredded mozzarella, chopped spinach, garlic powder, onion powder, and a pinch of salt and pepper until evenly combined.
  3. Pat the chicken breasts dry and cut a horizontal pocket into the thickest part of each breast.
  4. Spoon the filling into each pocket and seal with toothpicks if necessary.
  5. Heat olive oil in an ovenproof skillet over medium heat. Sear the stuffed breasts for 3-4 minutes per side until golden brown.
  6. Transfer to the oven and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 5 minutes before serving.

Notes

Use baby spinach for a milder taste. Frozen spinach can be used if thawed and excess moisture is removed. Swap mozzarella for other cheeses as desired.
