Instructions

  1. Whisk together the brown sugar, soy sauce, garlic, ginger, lime juice, and olive oil until the sugar fully dissolves.
  2. Pat the chicken dry with paper towels and season lightly with salt and pepper.
  3. Add the chicken to the marinade, ensuring it is evenly coated. Let sit for at least 30 minutes.
  4. For baking: Preheat the oven to 375°F. Arrange the marinated chicken in a single layer in a baking dish and pour the remaining marinade and pineapple over the top. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F.
  5. For grilling: Preheat the grill to medium-high heat. Cook the chicken for 6-8 minutes per side, basting with marinade after flipping. Grill pineapple during the last 4 minutes.
  6. For slow cooking: Place the chicken and pineapple in the slow cooker, pour the marinade over, and cook on low for 4-5 hours until tender.
