A delightful variation of classic banana bread featuring a warm cinnamon-sugar swirl.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1 cup powdered sugar
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, combine the mashed bananas with the melted butter.
  3. Mix in the baking soda and salt until well-blended.
  4. Add the sugar, beaten egg, and vanilla extract, stirring until combined.
  5. Gradually incorporate the flour, mixing until just combined.
  6. In a separate bowl, combine cinnamon and brown sugar for the filling.
  7. Pour half of the banana bread batter into the prepared loaf pan, then sprinkle with half of the cinnamon-sugar mixture.
  8. Layer the remaining batter on top, finishing with the rest of the cinnamon-sugar layer.
  9. Use a knife to gently swirl the batter together, but be careful not to overmix.
  10. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.

Notes

Store leftover banana bread in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
