A quick and budget-friendly tuna pasta salad with flaky tuna, tender pasta, and crisp veggies in a lemony mayo dressing.

Ingredients

  • 1 can of tuna, drained
  • 2 cups cooked pasta (rotini or shells)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup bell pepper, diced (any color)
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Flake the drained tuna into a large mixing bowl. Add the cooked and cooled pasta. Gently fold so the pasta is coated with tuna flakes.
  2. Add the halved cherry tomatoes, diced bell pepper, diced cucumber, and finely chopped red onion to the bowl. Toss briefly to combine.
  3. In a small bowl, whisk together the mayonnaise, lemon juice, a pinch of salt, and a few grinds of black pepper until smooth. Taste and adjust seasoning.
  4. Pour the dressing over the pasta and vegetables. Toss gently but thoroughly so every piece gets lightly coated. Avoid overmixing to keep the tomatoes from breaking down.
  5. Cover and chill the salad in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Notes

Use pasta cooked to just al dente so it holds up in the salad. For a lighter dressing, substitute half the mayonnaise with plain Greek yogurt and add a teaspoon of olive oil.
