Thai Basil Beef Rolls

Fresh and fun rolls filled with savory seasoned beef, crisp vegetables, and aromatic basil, perfect for weeknight dinners or potlucks.

  • 1 lb lean ground beef (85 to 90 percent lean)
  • 1 tbsp soy sauce (low-sodium preferred)
  • 1 tbsp hoisin sauce
  • 1 cup shredded carrots
  • 1/2 cup chopped bell peppers (any color)
  • Fresh basil leaves (Thai basil is ideal)
  • Rice paper wrappers (8 to 10 wrappers)

Instructions

  1. Heat a skillet over medium-high heat and add the ground beef. Break it up with a spatula.
  2. When the beef starts to brown, stir in the soy sauce and hoisin sauce. Continue cooking until no pink remains, about 5 to 7 minutes.
  3. Add the shredded carrots and chopped bell peppers to the pan. Cook for 2 to 3 minutes until tender-crisp. Adjust seasoning as needed.
  4. Remove the beef mixture from heat and let it cool slightly.
  5. Soak a rice paper wrapper in warm water for 8 to 12 seconds until soft but still firm.
  6. Lay the softened wrapper flat, place a spoonful of the beef mixture, and top with basil leaves.
  7. Fold the bottom edge up, fold in the sides, and roll snugly to seal. Repeat with remaining wrappers and filling.
  8. Serve immediately with your preferred dipping sauce.

Notes

For a gluten-free option, use tamari instead of soy sauce. For added flavor, increase aromatics like garlic and lime juice.
