A comforting and easy brunch dish made with brioche or challah soaked in a custardy egg-milk mixture and baked to perfection.

Ingredients

Scale
  • 1 loaf brioche, challah, or French bread, cut into 1-inch cubes
  • 6 large eggs
  • 2 cups whole milk (or full-fat plant milk for dairy-free)
  • 1/2 cup granulated sugar (or maple syrup, if desired)
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted (or dairy-free margarine)

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9×13-inch baking dish with butter or nonstick spray.
  3. Spread the bread cubes evenly in the prepared dish.
  4. In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until smooth.
  5. Pour the custard evenly over the bread and press down lightly so it absorbs the liquid.
  6. Drizzle the melted butter over the top in an even layer.
  7. Let the dish sit for 10 minutes to let the bread soak up the custard, or refrigerate overnight for a make-ahead option.
  8. Bake uncovered for about 40 minutes, or until the top is golden and the center is set.
  9. Remove from the oven and let cool briefly before slicing. Serve warm with maple syrup, powdered sugar, or fresh berries.

Notes

For best results, use day-old bread. You can also add variations like berries or chocolate chips to customize the flavor.
