  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup fresh pineapple, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 8 small corn or flour tortillas

Instructions

  1. Toss the diced chicken with olive oil, smoked paprika, chili powder, garlic powder, and salt until well coated.
  2. Heat a large skillet over medium-high heat and add the chicken in a single layer.
  3. Cook the chicken undisturbed for 3 minutes to develop a crust.
  4. Stir the chicken and continue cooking for another 4 to 5 minutes until fully cooked through and reaches an internal temperature of 165°F.
  5. Remove the skillet from heat.
  6. Prepare a refreshing salsa with diced pineapple, onion, and cilantro.
  7. Warm the tortillas to enhance their flavor.
  8. Assemble the tacos by layering the chicken and salsa.
