A delightful twist on classic banana bread, these brownies combine moist textures with rich banana flavor, topped with creamy frosting.

Ingredients

  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) sour cream (or plain Greek yogurt)
  • ½ cup (113 g) unsalted butter, softened
  • 2 large eggs
  • 4 ripe bananas, mashed (about 2 cups)
  • 2 teaspoons pure vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ cup (60 g) chopped walnuts (optional)
  • ½ cup (113 g) unsalted butter (for frosting)
  • 4 cups (480 g) powdered sugar
  • 1½ teaspoons pure vanilla extract (for frosting)
  • 3 tablespoons milk (more if needed for spreading)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
  2. Cream together the granulated sugar, sour cream, and softened butter until light and fluffy.
  3. Beat in the eggs, mashed bananas, and vanilla extract until smooth.
  4. Whisk together the all-purpose flour, baking soda, and salt in a separate bowl.
  5. Add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in the chopped walnuts if desired.
  7. Pour the batter into the prepared pan and spread it evenly.
  8. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the brownies cool in the pan on a wire rack.
  9. Melt the butter for the frosting over medium heat until light golden brown and nutty (approximately 4–5 minutes). Remove from heat and cool slightly.
  10. Whisk in the powdered sugar, vanilla extract, and milk until smooth and spreadable.

Notes

For best results, use very ripe bananas and do not overmix the batter. These brownies can be served with vanilla ice cream or whipped cream.
