Ingredients

Scale
  • 3 to 4 ripe bananas, mashed
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Mash the ripe bananas using a fork or potato masher until smooth.
  3. Pour the melted butter into the mashed bananas and mix well.
  4. Incorporate the sugar into the banana mixture, stirring until combined.
  5. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  7. Gradually add the flour mixture to the banana mixture, folding gently until no flour streaks remain.
  8. If desired, fold in chopped walnuts or pecans.
  9. Pour the batter into the prepared loaf pan and tap it gently on the counter.
  10. Bake for 55 to 65 minutes, or until a toothpick inserted comes out clean or with a few moist crumbs.

Notes

Using overripe bananas enhances sweetness and flavor. Allow the bread to cool before slicing to avoid a gummy texture.
