A scrumptious blend of tender baked potatoes filled with seasoned ground beef and melted cheese, topped with fresh ingredients for a comforting dish.

Ingredients

  • 4 large potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Toppings (sour cream, diced tomatoes, green onions, jalapeños, etc.)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then rub with olive oil and sprinkle with salt.
  3. Bake the potatoes for about 45-60 minutes, or until tender.
  4. Cook the ground beef over medium heat until browned, then drain excess fat.
  5. Add the taco seasoning and a little water, stirring to combine.
  6. Cut the baked potatoes open and fluff the insides with a fork.
  7. Spoon the cooked taco meat onto the potatoes, top with shredded cheese, and return to the oven for about 5-10 minutes, or until the cheese is melted.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For freezing, wrap each stuffed potato tightly in plastic wrap and aluminum foil to last up to three months.
