A quick, fresh take on a classic quesadilla filled with salty feta, milky mozzarella, bright tomato, and spinach, perfect for busy weeknights or quick lunches.

Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper, to taste

Instructions

  1. In a mixing bowl, combine the mozzarella, feta, chopped spinach, diced tomato, sliced red onion, and black pepper. Stir until evenly mixed.
  2. Lay one tortilla flat on your workspace. Spoon one quarter of the filling onto one half of the tortilla. Fold the empty half over the filling and press gently to seal. Repeat with remaining tortillas.
  3. Heat a nonstick skillet over medium heat and add the olive oil, swirling to coat the pan.
  4. Place a filled tortilla in the skillet and cook until the underside is golden brown, about 3 to 4 minutes.
  5. Flip the quesadilla and cook the other side until golden and the cheeses are melted, another 3 to 4 minutes.
  6. Transfer to a cutting board, let rest for 1 minute, then slice into wedges and serve warm.

Notes

For best melting, use low-moisture mozzarella. Adjust preparation for gluten-free versions.
