A refreshing and quick salad that pairs sweet watermelon with crisp cucumber and salty feta, perfect for warm weather.

Ingredients

  • 4 cups watermelon, cubed
  • 2 large cucumbers, sliced into 1/4 inch half-moons
  • 4 oz good feta cheese, crumbled
  • 1/4 red onion, thinly sliced (optional)
  • 1/4 cup fresh mint leaves, torn
  • 2 tbsp olive oil
  • Juice of 1 lime
  • Pinch of salt
  • Fresh cracked black pepper to taste
  • Optional: handful of toasted pine nuts or pumpkin seeds for crunch

Instructions

  1. Cut the watermelon into bite-size cubes.
  2. Slice the cucumbers into 1/4 inch half-moons.
  3. Crumble the feta into chunky pieces.
  4. Combine the watermelon and cucumber in a large bowl.
  5. Add the feta and torn mint leaves, and the red onion if using.
  6. Drizzle with the olive oil and squeeze in the lime juice.
  7. Add a small pinch of salt and fresh black pepper.
  8. Gently toss the ingredients.
  9. Let the salad rest for 15 minutes at room temperature.
  10. Serve chilled or at cool room temperature.

Notes

If cucumbers are watery, salt and drain for 10 minutes to keep the salad crisp. Rinse feta if concerned about saltiness.
