A simple and nutritious cabbage soup perfect for weight loss, rich in flavor and packed with fresh vegetables.

Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) of diced tomatoes
  • 6 cups of vegetable broth
  • 1 teaspoon of garlic powder
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, carrots, celery, and bell pepper until the vegetables are tender.
  2. Add the chopped cabbage and cook for a few more minutes.
  3. Stir in the diced tomatoes and vegetable broth.
  4. Add garlic powder, Italian seasoning, salt and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes or until all vegetables are tender.
  6. Serve hot.

Notes

For a thicker soup, blend a portion before serving. Store in an airtight container for up to 5 days or freeze for up to 3 months.
