Weight Watchers Cabbage Soup

A simple and nutritious cabbage soup perfect for weight loss, rich in flavor and packed with fresh vegetables.

Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) of diced tomatoes
  • 6 cups of vegetable broth
  • 1 teaspoon of garlic powder
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • 1 lb 99% fat-free ground turkey or lean ground beef (optional, but shown in photos!)

Instructions

  1. In a large pot, brown the ground turkey or beef (if using) and drain any excess fat. Add the onion, carrots, celery, and bell pepper, and sauté until the vegetables are tender.
  2. Add the chopped cabbage and cook for a few more minutes.
  3. Stir in the diced tomatoes and vegetable broth.
  4. Add garlic powder, Italian seasoning, salt and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes or until all vegetables are tender.
  6. Serve hot.

Notes

Chef’s Note on Photos: The images show this soup made with the optional ground meat! Adding 99% fat-free ground turkey or chicken breast is a fantastic way to make the soup heartier while keeping it Zero Points on most Weight Watchers plans. The base recipe is vegetarian, but I highly recommend browning some lean protein to add in! For a thicker soup, blend a portion before serving. Store in an airtight container for up to 5 days or freeze for up to 3 months.
