A hearty and flexible chili recipe made with ground beef or turkey, two kinds of beans, and warming spices, perfect for busy weeknights or meal prep.

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup beef or vegetable broth
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. Heat a large pot over medium heat. Add the ground beef or turkey. Break it up and brown until no pink remains. Drain excess fat if there’s a lot.
  2. Add the chopped onion to the pot. Cook until translucent, about 4 to 5 minutes. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Stir in the kidney beans and black beans so they warm through.
  4. Pour in the crushed tomatoes and the cup of broth. Stir to combine.
  5. Add the chili powder and cumin. Mix well. Bring the mixture to a gentle simmer.
  6. Reduce heat and simmer uncovered for 30 minutes, stirring occasionally so nothing sticks. The chili will thicken as it cooks.
  7. Taste and season with salt and pepper. Adjust chili powder or cumin if you want more heat or earthiness.
  8. Serve hot with your choice of shredded cheese, a dollop of sour cream, and chopped green onions.

Notes

Chili is friendly to busy cooks and picky eaters. It reheats and freezes well, making it ideal for meal prep or feeding a crowd. If the chili is too thin after simmering, cook uncovered a bit longer or mash a cup of beans to thicken naturally.
