A moist and flavorful zucchini bread made with almond flour and coconut flour, perfect for breakfast or a snack.

Ingredients

  • 2 cups grated zucchini
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the almond flour, coconut flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
  3. Whisk together the eggs, honey, melted coconut oil, and vanilla extract in another bowl.
  4. Stir the grated zucchini into the wet ingredients, then gradually mix the dry ingredients into the wet mixture until just combined.
  5. Fold in mini chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Squeeze excess moisture from the grated zucchini to prevent a soggy bread. Feel free to customize the bread by adding nuts or dried fruits.
