A moist and flavorful Lemon Zucchini Bread that’s perfect for snacks, brunch, or afternoon tea.

Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup sugar
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the grated zucchini with buttermilk, vegetable oil, eggs, lemon juice, and lemon zest until well combined.
  3. Combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and sugar in another bowl.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

Notes

Finely shred the zucchini for better incorporation into the batter. This Lemon Zucchini Bread can be served with whipped cream, fresh berries, or a sprinkle of powdered sugar.
