  • 1 cup mashed banana
  • 1/4 cup melted butter
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together shredded zucchini and mashed banana.
  3. Stir in the melted butter, sugar, egg, and vanilla extract until combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the banana-zucchini mixture until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.

Notes

Make sure to squeeze excess moisture from the zucchini before adding it to the batter. Using overly ripe bananas will enhance the sweetness and flavor.
