  • 1/2 cup vegetable oil
  • 2 large eggs

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix the mashed bananas, grated zucchini, sugar, brown sugar, oil, eggs, and vanilla until well combined.
  3. Whisk together flour, baking soda, baking powder, salt, and cinnamon in another bowl.
  4. Add the dry ingredients to the wet ingredients gradually until just combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

For best results, ensure bananas are ripe and grate the zucchini finely. Allow the bread to cool completely before slicing to maintain structure.
