A moist and flavorful zucchini bread recipe that’s perfect for breakfast or a snack.

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9×5 inch loaf pan.
  2. Mix together the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until well combined.
  3. Whisk together the flour, baking soda, baking powder, cinnamon, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Notes

Squeeze excess moisture from the grated zucchini for better texture. Use room temperature ingredients for a smoother batter.
