Ingredients

Scale
  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 8 oz cream cheese (softened)
  • 4 cups powdered sugar
  • 1/4 cup unsalted butter (softened)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Beat together the granulated sugar, vegetable oil, and eggs in a large mixing bowl until well combined.
  3. Stir in the vanilla extract and grated zucchini.
  4. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
  5. Add the dry ingredients to the wet ingredients gradually, mixing until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Ensure zucchini is well-drained to avoid excess moisture. For a fun twist, consider adding chocolate chips.
