A delightful cake that combines rich peanut butter with moist grated zucchini, perfect for a satisfying dessert.

  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
  2. Mix together the peanut butter, granulated sugar, brown sugar, and vegetable oil until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, baking powder, salt, and cinnamon in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the grated zucchini.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Notes

For a lighter texture, do not overmix the batter once the dry ingredients are added. Serve with whipped cream or ice cream for added delight.
