A quick and satisfying dish with tender chicken and vibrant broccoli, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Mix the soy sauce, honey, rice vinegar, garlic, and ginger in a bowl. Set aside.
  2. Toss the chicken pieces with cornstarch, salt, and pepper in another bowl.
  3. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  5. Add the broccoli to the skillet and stir-fry for another 3-4 minutes until bright green and tender-crisp.
  6. Pour the sauce over the chicken and broccoli, stirring to coat. Cook for another 2 minutes until the sauce thickens.

Notes

For the best results, use fresh broccoli. Adjust the sweetness of the sauce by varying the amount of honey.
